I have no idea where this week went! With work and my husband starting a second degree program it has been pretty busy, though I did manage to make several meals and this one had to be my favorite.
This bread is so tasty I’m thinking about making it again tonight. If you have a cheese craving then this will absolutely quell that.
The reason why this is called “bloomin’ onion” bread is not because it tastes like onion but because of the way it pulls apart. This is why I added the shallots to my recipe. I was looking for that slight onion taste but loved the bread because of the cheesyness and, of course, the garlic butter.
Here is the recipe:
1 loaf sourdough bread
1/2 lb. sliced Monterey jack cheese (or more if you want)
1 stick butter or margarine
2-3 tbsp. minced garlic
1 minced shallot
Preheat oven to 350°.
Place bread on foil lined sheet pan. Slice bread without going through the bottom crust then turn 90° and slice again, making 1 in. squares.
Place a slice, or two, of cheese between each square of bread.
Add butter, garlic and shallot to bowl and microwave until butter is melted. Pour over the bread and cheese.
Cover bread with foil and bake for about 10-15 minutes. Uncover and bake for another 10 minutes or until all the cheese is melted.
You can serve this as an appetizer or do what I did and cut off a rather large chunk and inhale as quickly as possible. I swear, if anyone came close to my food while I was attempting to ingest it whole, much like a snake, they would have lost a finger. I actually ate it so quickly that I didn’t even have time to take a picture, so this one, from the girl who ate everything, will have to suffice. I think the only differences are that she added green onions and poppy seeds to the butter instead of the shallot and garlic.
